Homemade Cheesy Hamburger Macaroni

My husband makes an awesome homemade version of Hamburger Helper. I am not a fan of Hamburger Helper at all, but his homemade version is wonderful! Not only does it taste better but it is more budget friendly and better for you (even though I still would say it is really "good for you" :) ) Here's the recipe for ya:

Cheesy Hamburger Macaroni
1lb lean ground beef
1/2 onion, diced
1/2 green pepper, diced
salt and pepper
garlic powder
8oz macaroni noodles (or 3 handfuls)
4oz cheddar cheese
1/4lb velveeta, cut in cubes

First start by browning the beef with the onion and green pepper. Season the beef with salt, pepper, and garlic powder; to taste.

While browning beef, boil noodles in large pot of salted water until desired doneness.

Make Bechamel Sauce (see below), and add the cheeses to it until melted.

Then add noodles and cheese sauce to beef mixture. Stir to combine and you are done!!!


Bechamel Sauce:
2tbs butter
2tbs flour
2 cups milk

Melt butter in medium sauce pan. Add flour and whisk to combine. Heat until it starts to turn brown and smell a bit nutty. Then, while whisking fast, add milk. Cook until it starts to become slightly thick.
