Sauteed Fresh Green Beans

This is the only way we eat green beans anymore. My kids eat these like they are french fries!!

Ingredients:
1lb fresh green beans, trimmed
2Tablespoons good extra virgin olive oil
4-5 cloves fresh garlic (sliced!)
Couple dashes crushed red pepper flakes
Salt (kosher salt works best but any will work)

You will need: *go ahead and get all this out and ready it will make it much easier and faster
A large pot of water to boil
A large bowl of ice water
Strainer
Large skillet

Boil a large pot of water. Once it boils add the green beans. Only blanch the green beans (about 3 minutes), just until they get bright green. Remove immediately and add to bowl of ice water to stop cooking. Leave them there until completely cooled. Once cooled put them in a strainer to dry completely.

While green beans are drying in a large skillet heat the oil at medium high. Once the oil is hot add the garlic. Cook the garlic until it is almost browned (but do not let it brown b/c it will become bitter). Once garlic starts to brown, remove it from the pan but reserve the oil in the pan. Then add the green beans to the oil in the pan. Toss them in the oil and then add the crushed red pepper flakes (however much you can stand) and the salt (generous amount). Sauté for another 7 minutes (about) on med high heat. Don't let the green beans over cook or they will be mushy, you want them crisp.
